  • 1 cup Fresh Pineapple, cubed
  • 1 cup Bell Peppers, sliced

  • 2 tablespoons Olive Oil
  • Green Onions, for garnish

Instructions

  1. Prep your ingredients by washing and chopping the chicken, pineapple, and bell peppers into bite-sized pieces.
  2. In a large skillet over medium heat, heat olive oil. Add chicken pieces, season with salt and pepper, and sear for 5-7 minutes until golden brown and cooked through.
  3. Add minced garlic and ginger to the pan and cook for 1-2 minutes until fragrant.
  4. Stir in cubed pineapple and sliced bell peppers, cooking for another 5 minutes until pineapple caramelizes and peppers soften.
  5. Pour soy sauce over the chicken mixture and stir to combine. Simmer for 3-5 minutes until the sauce thickens slightly.
  6. Ensure chicken is fully cooked and peppers are tender. Remove from heat and transfer to a serving dish.
