Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup coconut oil
  • 1/4 cup honey or maple syrup
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon + additional for coating
  • Sugar or a sugar substitute for coating

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine melted coconut oil, honey (or maple syrup), and salt. Stir until well mixed.
  3. In another bowl, mix the whole wheat flour, baking powder, and cinnamon.
  4. Gradually add the dry mixture to the wet one. Stir until it forms a soft dough.
  5. Lightly flour your hands and roll the dough into small balls about 1 inch in diameter.
  6. Place the dough balls on a parchment-lined baking sheet.
  7. Bake for about 12-15 minutes or until lightly golden.
  8. Once out of the oven and still warm, roll each bite in a mix of cinnamon and sugar.

Notes

Keep leftovers in an airtight container for 2-3 days, or refrigerate for a week. Reheat in the oven for best results.
