Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup or honey
  • 1 egg, beaten
  • 1/4 cup coconut sugar for coating
  • 1 tbsp cinnamon for coating

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the whole wheat flour, almond flour, baking powder, salt, and cinnamon. Stir until well blended.
  3. In a separate bowl, whisk together the melted coconut oil, maple syrup (or honey), and the beaten egg until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Using a small cookie scoop or your hands, form dough into bite-sized balls and place them onto the prepared baking sheet.
  6. In a small bowl, mix together the coconut sugar and additional cinnamon for coating.
  7. After removing the churro bites from the oven, immediately roll each one in the cinnamon-sugar mixture to coat thoroughly.
  8. Bake the bites in the preheated oven for 12-15 minutes or until golden brown and slightly firm to the touch.

Notes

Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate to extend freshness.
