Ingredients

  • 1 cup whole wheat flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup honey
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a mini muffin tin with paper liners.
  2. In a bowl, mix together the whole wheat flour, cocoa powder, baking soda, and salt until well combined.
  3. In another bowl, whisk together the honey, applesauce, almond milk, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients by gently folding them together until just combined. Be careful not to overmix.
  5. Fold in the dark chocolate chips until evenly distributed throughout the batter.
  6. Spoon the batter into the prepared muffin tin, filling each liner about 2/3 full.
  7. Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for a few minutes before transferring to a wire rack.

Notes

For added flavor, consider adding a pinch of cinnamon. Store muffins in an airtight container for up to a week.
