Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy (about 3-4 minutes).
  3. Add the lemon curd and mix until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add this to the wet mixture, stirring until just combined.
  5. Fold in the desiccated coconut until evenly distributed.
  6. Scoop tablespoon-sized portions of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool before transferring to a wire rack.

Notes

For a gluten-free option, swap out regular flour for gluten-free flour. Chill the dough if it’s too sticky.
