Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup mascarpone cheese
  • 3 large eggs
  • 1 cup shelled pistachios (chopped)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Lightly grease the slow cooker insert with cooking spray or line it with parchment paper.
  2. In a large mixing bowl, whisk together the mascarpone, eggs, and vanilla extract until smooth.
  3. In another bowl, mix the flour, sugar, baking powder, baking soda, and salt.
  4. Gradually add the dry mixture into the wet ingredients, mixing until just combined. Fold in the chopped pistachios.
  5. Pour the batter into the prepared slow cooker, smoothing the top with a spatula.
  6. Cover and cook on low for 2-3 hours or until a toothpick inserted comes out clean.
  7. Allow the loaf to cool slightly in the slow cooker before transferring it to a wire rack. Slice and enjoy!
