Ingredients

  • 8 ounces penne or rotini pasta
  • 1 pound ground beef
  • 1 cup heavy cream
  • 1 cup shredded cheese (Cheddar or Parmesan)
  • 1 teaspoon garlic powder
  • 1 cup chopped spinach
  • Salt and pepper to taste

Instructions

  1. Bring salted water to a rolling boil in a large pot, add the pasta and cook until al dente, about 8-10 minutes. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet, cook the ground beef over medium heat for about 5-7 minutes until browned and cooked through.
  3. Reduce heat and stir in heavy cream and shredded cheese until the cheese melts and the mixture thickens.
  4. Add the cooked pasta to the skillet, tossing to coat. Use reserved pasta water if needed to achieve desired consistency.
  5. Stir in chopped spinach, garlic powder, salt, and pepper, cooking for another 2-3 minutes until spinach wilts.
  6. Taste and adjust seasoning as necessary, then serve immediately.

Notes

For a lighter option, substitute ground turkey or chicken instead of beef. Can also use gluten-free pasta.
