  • 1/2 cup butter
  • 1 cup packed brown sugar
  • 1 can (20 oz) sliced pineapple
  • Maraschino cherries (about 10 for decoration)
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). In a 9×13-inch pan, melt the butter in the oven, then sprinkle the brown sugar evenly over it once melted.
  2. Place the sliced pineapple on top of the brown sugar mixture, and insert a maraschino cherry into the center of each pineapple ring.
  3. In a bowl, combine flour, granulated sugar, baking powder, and salt. In another bowl, whisk the milk, eggs, and vanilla. Gradually add the wet ingredients to the dry, stirring until just combined.
  4. Carefully spoon the cake batter over the pineapple arrangement in the pan, spreading it evenly.
  5. Bake in the preheated oven for 35-40 minutes, or until a toothpick comes out clean from the center of the cake.
  6. Allow the cake to cool for 10 minutes. Then, carefully flip it onto a serving plate, letting the sugary pineapple topping ooze down the sides.
  7. Enjoy your cake warm or at room temperature.
