  • 1 cup granulated sugar
  • 1/2 cup honey
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • Optional: 1 cup pecans or walnuts, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until fluffy.
  3. Beat in the honey, eggs, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. If desired, fold in the chopped nuts.
  6. Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet about 2 inches apart. Bake for 12-15 minutes until the edges are lightly golden.
  7. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
