  • 1 1/2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1/2 teaspoon garlic powder
  • 5 cloves garlic, minced
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon butter
  • 1 1/2 cups jasmine or white rice
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon butter
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the creamy rice. In a large pot combine 1 1/2 cups rice and 3 cups chicken broth. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and stir in 1 tablespoon butter, 1 cup heavy cream, 1/2 cup cream cheese, 1 cup shredded mozzarella, and 1/2 cup grated Parmesan until everything melts together and the rice is creamy. Season with 1 teaspoon Italian seasoning, salt, and pepper to taste. Keep warm while you prepare the chicken.
  2. Prepare the chicken. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Season the chicken with salt, black pepper, and 1/2 teaspoon garlic powder. Add the chicken to the skillet and sear until golden and cooked through, 12-15 minutes, turning occasionally.
  3. Make the honey garlic sauce. Push the cooked chicken to the edges and add 1 tablespoon butter and minced garlic to the center. Sauté until fragrant, then pour in 1/4 cup honey, 2 tablespoons soy sauce, and 1 tablespoon apple cider vinegar. Stir to coat the chicken and bring to a simmer, cooking for 2-3 minutes until the sauce thickens slightly.
  4. Assemble and serve. Spoon the creamy Parmesan rice onto plates, top with honey garlic chicken bites, and drizzle remaining sauce over the top. Garnish with chopped parsley and serve immediately.

Notes

Let chicken pieces rest before cooking for even searing. Refrigerate leftovers for up to 3 days.
