  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 2 cups rolled oats
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for icing)
  • 23 tbsp milk (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until fully combined.
  4. In another bowl, whisk together the flour, oats, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop tablespoon-sized balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until they are lightly golden. Let the cookies cool on a wire rack.
  8. Make the icing by mixing powdered sugar and milk until smooth. Drizzle over the cooled cookies.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Store cookies in an airtight container at room temperature for up to a week.
