Instructions

  1. Prepare the Crust: In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of mini mason jars or cupcake liners.
  2. Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese, sugar, vanilla extract, and egg until smooth and creamy. Set aside.
  3. Cook the Apples: In a saucepan, combine diced apples, brown sugar, cinnamon, and lemon juice. Cook over medium heat for about 5-7 minutes until apples soften. Set aside to cool.
  4. Assemble Cheesecakes: Layer a scoop of the cheesecake filling on top of the crust in each jar or liner. Top with the cooked apple mixture.
  5. Prepare the Crisp Topping: In a separate bowl, combine oats, flour, brown sugar, and melted butter. Sprinkle the crisp topping over the apple layer.
