  • 2 ripe bananas
  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk (or almond/oat milk for dairy-free)
  • 1 large egg
  • 2 tablespoons melted butter (or coconut oil for dairy-free)

Instructions

  1. Mash the bananas in a medium bowl until mostly smooth with a few lumps remaining.
  2. In a separate bowl, mix the flour, brown sugar, baking powder, baking soda, and salt until combined.
  3. Add the milk, egg, and melted butter to the mashed bananas, whisking until smooth.
  4. Gently fold the dry ingredients into the wet mixture until just combined; a few lumps are fine.
  5. Preheat a skillet or griddle over medium heat and lightly grease it.
  6. Pour about 1/4 cup of batter for each pancake and cook until bubbles form and edges look set (about 2-3 minutes).
  7. Flip the pancakes and cook for an additional 2 minutes until golden brown. Serve warm with maple syrup or desired toppings.

Notes

These pancakes can be stored in an airtight container in the fridge for up to three days. They can also be frozen for up to two months.
