Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 large carrots, sliced
  • 4 medium potatoes, diced
  • 1 onion, diced
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • Salt and pepper, to taste

Instructions

  1. Prep the Ingredients: Cut the beef, dice the onion, and slice the carrots and potatoes.
  2. Sear the Beef: Heat oil in a pot, sear beef cubes until browned on all sides, then set aside.
  3. Sauté the Aromatics: Add onions to the pot and sauté until soft and translucent.
  4. Add Tomato Paste and Broth: Stir in tomato paste, then add beef broth and scrape up the browned bits.
  5. Combine Everything: Return beef to the pot with carrots and potatoes; stir in thyme and season.
  6. Simmer the Stew: Cover and simmer for 2-3 hours until flavors meld and beef is tender.
  7. Serve and Enjoy: Adjust seasoning and serve warm, optionally with bread.

Notes

This stew can be easily adapted by substituting vegetables or using chicken instead of beef.
