Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, mix the diced apples with lemon juice, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Add the egg and vanilla extract and mix until combined.
  4. Gradually add the flour, baking powder, and salt; mix until a dough forms. Gently fold in the prepared apples.
  5. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, leaving space between each cookie.
  6. Bake for 15-18 minutes or until edges turn golden. Allow to cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
