Ingredients

  • 12 ounces refrigerated tortellini
  • 8 ounces thinly sliced steak (ribeye or sirloin)
  • 1 cup sliced onions
  • 1 cup chopped bell peppers
  • 2 cups heavy cream
  • 1 cup shredded provolone cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sliced onions and chopped bell peppers. Cook for about 5 minutes until soft.
  2. Push veggies to one side and add steak, seasoning with salt and pepper. Cook for 3-4 minutes until no longer pink.
  3. Pour in heavy cream and mix with the veggies and steak. Let the cream bubble and thicken slightly.
  4. Gradually stir in shredded provolone cheese until melted and incorporated.
  5. Add tortellini to the skillet, coating with the sauce, and cook for an additional 3-5 minutes until heated through.
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with extra cheese or parsley if desired.

Notes

For a vegetarian version, substitute beef with mushrooms or a plant-based protein. Can be made in an air fryer or slow cooker as well.
