Ingredients

  • 1 package ramen noodles
  • 4 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 1 large tomato, diced
  • 2 cups spinach or kale, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt & pepper to taste

Instructions

  1. Prepare Ingredients: Chop the onion, mince the garlic, and slice the carrots and tomato.
  2. Sauté Aromatics: In a large pot, heat the olive oil and sauté the onion and garlic until translucent, about 3–4 minutes.
  3. Add Vegetables: Stir in the carrots and tomatoes, cooking for an additional 5 minutes.
  4. Pour in Broth: Add the broth and bring to a gentle simmer, adding dried herbs. Simmer for about 10 minutes.
  5. Cook Noodles: Add the ramen noodles, cooking for 4–5 minutes until tender but firm.
  6. Add Greens: Stir in the spinach or kale and season with salt and pepper, cooking for another 2–3 minutes.
  7. Serve & Enjoy: Ladle the soup into bowls and garnish with fresh basil or cheese if desired.

Notes

Store leftover soup in an airtight container for up to three days. For freezing, leave out the noodles until reheating.
