Ingredients

Scale
  • 2 tablespoons unflavored gelatin
  • 1 ½ cups fruit juice or puree
  • Low-sugar cake mix
  • Fresh vegetables (tomatoes, cucumbers, bell peppers)
  • Olive oil
  • Lemon juice
  • Fresh herbs (cilantro or mint)

Instructions

  1. In a saucepan, bring 1 cup of water to a boil. Stir in the gelatin until dissolved.
  2. Mix in the fruit juice or puree and remove from heat; let cool slightly.
  3. Pour the mixture into shot glasses or molds and refrigerate for 4 hours until set.
  4. Preheat the oven to 350°F (180°C). Prepare the low-sugar cake mix according to instructions.
  5. Pour the batter into a greased cake pan and bake for 25-30 minutes. Let cool.
  6. Chop fresh veggies and toss with olive oil, lemon juice, and herbs for the salad.
  7. Slice the cake, plate the salad, and serve the Jello Shots chilled.

Notes
