Ingredients

  • 34 pounds chuck roast
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • 45 medium carrots, chopped
  • 34 medium potatoes, diced

Instructions

  1. Season the chuck roast generously with salt and pepper. Heat a skillet over medium-high heat and sear the roast for about 3-4 minutes on each side until browned.
  2. In the same skillet, add the sliced onions and a splash of olive oil if needed. Cook for about 10 minutes, stirring frequently until caramelized.
  3. In your slow cooker, add the seared roast, caramelized onions, minced garlic, chopped carrots, diced potatoes, beef broth, Worcestershire sauce, and thyme. Stir gently to combine.
  4. Set the slow cooker to low and cook for 6-8 hours until the meat is fork-tender.
  5. Check for tenderness, then remove the roast and let it rest for about 10 minutes before slicing.
  6. Serve alongside the vegetables and spoon the rich onion gravy over everything.
