  • 2 pounds boneless, skinless chicken thighs, trimmed
  • 8 tablespoons unsalted butter, divided
  • 6 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 2 tablespoons chopped fresh parsley, plus more for garnish
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels and season with salt and pepper.
  2. Heat a skillet over medium-high heat; add olive oil or butter for searing.
  3. Sear the chicken for 3 to 4 minutes per side until golden brown and set aside.
  4. Add remaining butter to the skillet; once melted, sauté minced garlic until fragrant.
  5. Pour in chicken broth and scrape up any browned bits from the pan.
  6. Let the broth simmer for 2 minutes; stir in heavy cream and simmer until slightly thickened.
  7. Return the chicken to the skillet, nestling into the sauce, and cover to simmer until cooked through.
  8. Remove from heat, stir in chopped parsley, and serve immediately.

Notes

Use room temperature chicken for even cooking. Leftovers can be refrigerated for up to 3 days.
