Ingredients

  • 8 lasagna noodles
  • 15 oz ricotta cheese
  • 2 cups fresh spinach, chopped
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente.
  3. In a mixing bowl, combine the ricotta cheese, chopped spinach, egg, salt, and pepper. Mix until well integrated.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. On a flat surface, lay out each noodle, spread 2-3 tablespoons of the ricotta mixture evenly over it, and roll it up tightly, placing it seam-side down in the dish.
  6. Repeat until all noodles are filled.
  7. Pour the remaining marinara sauce over the roll-ups and sprinkle mozzarella cheese on top.
  8. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and slightly browned.

Notes

Leftover roll-ups can be refrigerated for up to 4 days or frozen for a quick dinner later.
