Ingredients

  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 2 large eggs
  • Zest of 2 lemons
  • 1/4 cup (60ml) lemon juice
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8-inch baking dish with butter or line with parchment paper.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, mix melted butter, sugar, eggs, lemon zest, and lemon juice until well combined.
  5. Gradually add dry ingredients to wet ingredients, folding gently until just combined.
  6. Pour batter into the prepared baking dish and smooth evenly.
  7. Bake for 20-25 minutes until edges are lightly golden and a toothpick comes out with a few moist crumbs.
  8. Cool completely, then drizzle with a lemon glaze made from powdered sugar and lemon juice, slice and enjoy.

Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
