Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • ½ cup grated Romano cheese
  • 2 large eggs
  • Juice of 2 lemons
  • Salt and pepper, to taste
  • Olive oil, for drizzling

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pound chicken breasts to an even thickness (½ inch) and season with salt and pepper.
  3. In one bowl, beat eggs with lemon juice. In another bowl, mix breadcrumbs with grated Romano cheese.
  4. Dip chicken into egg mixture, then coat with breadcrumb and cheese mixture.
  5. Place breaded chicken in a greased baking dish, drizzle olive oil over the tops.
  6. Bake for 20-25 minutes or until cooked through and golden brown, with internal temperature reaching 165°F (74°C).
  7. Let rest for a few minutes before slicing and serve with fresh parsley and lemon wedges.
