1 ½ cups all-purpose flour
¾ cup granulated sugar
½ cup unsalted butter, melted
½ teaspoon baking powder
2 large eggs
1 cup granulated sugar (for filling)
1/3 cup lemon juice, freshly squeezed
1 tablespoon lemon zest
Instructions
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine flour, sugar, melted butter, and baking powder. Mix until crumbly. Press half of the mixture into the bottom of a greased 8×8 inch baking pan.
Bake the crust for 15 minutes or until lightly golden. Remove from oven and let cool slightly.
In another bowl, whisk together eggs, sugar, lemon juice, and lemon zest until smooth.
Pour the lemon mixture over the baked crust evenly.
Sprinkle the remaining crumble mixture over the top of the filling.
Bake for an additional 20-25 minutes, or until the crumble is golden brown and the filling is set.
Notes
For best flavor, use freshly squeezed lemons. Chill before serving for better texture.
