Ingredients

  • ½ cup granulated sugar
  • ½ cup unsalted butter
  • 1 large egg
  • â…“ cup freshly squeezed lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9-inch baking dish or line it with parchment paper.
  3. In a mixing bowl, combine the flour and sugar.
  4. Melt the butter and pour it over the dry ingredients, mixing until it resembles coarse crumbs.
  5. Press two-thirds of the mixture into the base of the baking dish.
  6. Bake for 15 minutes or until lightly golden.
  7. In another bowl, whisk together the egg, lemon juice, and lemon zest, then pour over the crust.
  8. Sprinkle the remaining crumbs on top and bake for an additional 20-25 minutes.
  9. Cool completely before slicing into squares.
