Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • Salt and pepper to taste
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Heat the olive oil and butter in a large skillet over medium heat until melted and foamy.
  2. Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.
  3. Add the chicken to the hot skillet and cook without moving until golden brown, about 5 to 7 minutes.
  4. Flip the chicken and cook until internal temperature reaches 165°F, about another 5 to 7 minutes.
  5. Remove chicken from skillet and let rest on a plate.
  6. Add minced garlic to the skillet and sauté for 30 seconds to 1 minute until fragrant.
  7. Incorporate lemon zest and juice, scraping browned bits from the pan to combine with garlic and butter.
  8. Return the chicken to the skillet, spoon sauce over and warm together for a minute.
  9. Serve hot, spooning extra sauce over chicken and pairing with creamy parmesan pasta.

Notes

Pat chicken dry before seasoning for a golden crust. For a thicker sauce, simmer longer or add a small pat of butter off heat.
