Ingredients

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, combine the flour, baking powder, and salt. Whisk together until no lumps remain.
  4. In a larger bowl, beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.
  5. Add the egg, lemon zest, and lemon juice to the butter-sugar mixture. Mix until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  7. Using a tablespoon or cookie scoop, drop balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, until the edges are lightly golden and the cookies are slightly puffed.
