Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 teaspoons lemon zest
  • 1 large egg yolk
  • 1/2 cup lemon curd

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the lemon zest and egg yolk, mixing until well combined.
  4. Gradually add the flour and salt, stirring until a soft dough forms.
  5. Scoop tablespoon-sized portions of dough and roll them into balls on a lined baking sheet.
  6. Make an indention in the center of each ball using your thumb.
  7. Fill each indention with about half a teaspoon of lemon curd.
  8. Bake for 12-15 minutes, or until the edges are lightly golden.

Notes

Keep cookies in an airtight container for up to one week. Unbaked dough can be frozen for up to three months.
