Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 tsp lemon zest
  • 1 egg yolk
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 cup lemon curd or lemon frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Mix in the lemon zest and egg yolk, blending well.
  4. Gradually add flour and salt to the mixture until just combined. Do not overmix!
  5. Roll the dough into 1-inch balls and place them on the prepared baking sheet. Use your thumb to create an indentation in each cookie.
  6. Spoon about 1 teaspoon of lemon curd into each thumbprint indentation.
  7. Bake for 12-15 minutes or until the edges are lightly golden. Allow to cool on the baking sheet before transferring to a wire rack.
