Ingredients

  • 1.5 lbs boneless, skinless chicken breast
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, sliced
  • ½ cup crumbled feta cheese
  • 2 cups cooked quinoa or couscous
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Add the chicken, ensuring it’s well-coated. Let it marinate for at least 30 minutes.
  2. For Crockpot: Place the marinated chicken in a slow cooker and cook on low for 6-7 hours or high for 3-4 hours, until cooked through.
  3. For Air Fryer: Preheat to 375°F (190°C) and cook for 15-20 minutes, flipping halfway, until chicken reaches 165°F (75°C).
  4. In a small bowl, mix diced cucumber, Greek yogurt, olive oil, lemon juice, salt, and chopped parsley to prepare tzatziki.
  5. Once chicken is cooked, shred or slice it. In bowls, layer cooked quinoa or couscous, chicken, diced cucumber, cherry tomatoes, red onion, and crumbled feta.
  6. Drizzle tzatziki over the top of each bowl and garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container for up to 4 days. You can prepare the chicken a day in advance for maximum flavor.
