Ingredients

Scale
  • 1 pound kielbasa, sliced into rounds
  • 1 package (16 oz) gnocchi
  • 2 cups fresh spinach (or kale)
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. In a large skillet over medium heat, add olive oil and let it warm for about 1 minute until shimmering.
  2. Add the sliced kielbasa and sauté for about 5-7 minutes until browned and slightly crispy.
  3. Toss in the minced garlic and halved cherry tomatoes, sauté for another 2-3 minutes until the tomatoes soften.
  4. In a separate pot, boil salted water and cook the gnocchi according to package instructions, usually about 2-3 minutes until they float to the top.
  5. Drain the gnocchi and add to the skillet with the kielbasa and tomatoes, stirring gently.
  6. Fold in the fresh spinach and let it wilt for about 2 minutes.
  7. Season with salt and pepper to taste, garnish with parsley or basil, and serve warm.

Notes

Feel free to swap kielbasa with other types of sausage and add seasonal vegetables as desired.
