  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat the softened butter with an electric mixer until creamy. Add the eggs, maple syrup, and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
  5. Fold in the chopped pecans gently so they are evenly distributed throughout the batter.
  6. Divide the batter into the prepared cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let them cool for 5 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days. Freezing is possible for up to 3 months.
