Ingredients

  • 1 medium acorn squash
  • 1/4 cup pure maple syrup
  • 1/2 cup chopped pecans
  • 2 tablespoons olive oil
  • 1 teaspoon ground cinnamon
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) or prepare your air fryer.
  2. Cut the acorn squash in half lengthwise and scoop out the seeds.
  3. In a small bowl, combine maple syrup, olive oil, cinnamon, salt, and pepper to make the glaze.
  4. Place the squash halves cut-side up on a baking dish and drizzle the maple mixture over each half.
  5. Sprinkle the chopped pecans generously over the squashes.
  6. Bake in the oven for about 30-35 minutes, or air fry for 20-25 minutes, until the squash is tender and slightly caramelized.
  7. Remove from the oven and let cool slightly before slicing into wedges. Enjoy!

Notes

Can substitute walnuts or almonds for pecans and add nutmeg or allspice for extra flavor. Store leftovers in an airtight container for up to 3 days.
