  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cups baby spinach
  • 1 tablespoon dried Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the Ingredients: Dice the onion and mince the garlic. Set aside.
  2. Add Chicken: Place the chicken thighs in the bottom of your slow cooker.
  3. Mix It Up: Pour in the chicken broth, add the diced onion, minced garlic, and Italian seasoning over the chicken.
  4. Cooking Time: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through.
  5. Shred the Chicken: Once done, use two forks to shred the chicken into bite-sized pieces directly in the slow cooker.
  6. Stir in Cream and Spinach: Add the heavy cream and baby spinach, stirring until the spinach wilts and everything is heated through (about 10 minutes).
  7. Season and Serve: Season with salt and pepper to taste, garnish with fresh parsley, and enjoy!

Notes

This soup freezes well; omit the cream before freezing and add it during reheating.
