Ingredients

  • 1 cup buttermilk

  • 4 large eggs
  • 1 cup unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Whisk well.
  4. In another bowl, cream the butter and sugar using an electric mixer until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition. Then stir in the buttermilk and vanilla.
  6. Slowly mix the dry ingredients into the wet ingredients until just combined.
  7. Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.

Notes

For a richer flavor, consider adding a teaspoon of espresso powder or substitute half of the butter with applesauce for a lower-fat version. Store covered at room temperature for up to 3 days.
