Ingredients

  • 4 chicken thighs (bone-in, skin-on or boneless)
  • 1 cup long-grain rice
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can diced tomatoes (with juice)
  • 2 cups vegetable or chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add olive oil. Once hot, add the onion and garlic, cooking until soft and fragrant (about 3-4 minutes).
  3. Increase the heat to medium-high and brown the chicken thighs skin-side down for about 5 minutes, then flip and brown for an additional 4 minutes.
  4. Add the diced red bell pepper and cook for another 2 minutes.
  5. Stir in the rice, diced tomatoes, broth, oregano, cumin, paprika, and lemon juice. Mix well and let simmer.
  6. Transfer everything to a large oven-safe baking dish. Cover tightly with aluminum foil.
  7. Bake for about 30 minutes, checking if the rice is tender and liquid is absorbed. If not, bake for an additional 5-10 minutes.

Notes

This dish can be adapted for slow cooking or air frying. Allow leftovers to cool completely before storing.
