Ingredients

  • 1 cup pecans
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup corn syrup
  • 1/4 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 package pre-made pie crusts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a standard muffin tin with cooking spray or butter.
  3. Roll out the pie crust and cut it into circles, pressing each into the muffin tin.
  4. In a mixing bowl, combine pecans, brown sugar, granulated sugar, corn syrup, melted butter, eggs, and vanilla extract; stir well.
  5. Spoon the pecan mixture into each pie crust, filling 3/4 full.
  6. Bake for 20-25 minutes until the filling is set and the crust is golden.
  7. Allow to cool for 10 minutes, then carefully remove from the tin.

Notes

Great for gatherings, can be made ahead of time; store uneaten pies for up to 3 days at room temperature.
