Ingredients

  • 1 lb ground beef
  • 8 oz egg noodles
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 2 green onions, chopped (for garnish)
  • 1 tsp sesame oil

Instructions

  1. Cook the egg noodles according to package instructions until al dente, around 7-8 minutes. Drain and toss with a bit of oil.
  2. In a large skillet over medium-high heat, add the ground beef and cook until browned, about 5-6 minutes.
  3. Add minced garlic and ginger to the skillet and sauté for 1-2 minutes until fragrant.
  4. Mix in bell peppers and carrots, cooking for 3-4 minutes until softened.
  5. Add soy sauce and sesame oil, stirring for about 2 minutes until everything is well combined.
  6. Incorporate the cooked noodles, tossing to coat them in the sauce. Stir for an additional 2 minutes.
  7. Remove from heat, garnish with chopped green onions, and serve immediately.

Notes

For a spicier kick, consider adding red pepper flakes or Sriracha to the sauce.
