Ingredients

  • 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 12 oz bowtie (farfalle) pasta
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon crushed red pepper flakes
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. Season the chicken pieces with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden, about 6 to 7 minutes. Remove from skillet and set aside.
  4. Melt butter in the same skillet over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  5. Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  6. Add mozzarella and Parmesan cheese, stirring until the sauce is smooth and thickened, about 3 to 4 minutes. Season with salt, pepper, and crushed red pepper flakes.
  7. Return the cooked chicken to the skillet and add the pasta. Toss everything together, adding reserved pasta water as needed.
  8. Sprinkle with chopped parsley before serving.

Notes

For a cheesier dish, add more mozzarella. Adjust red pepper flakes for desired spice level.
