Ingredients

  • 2 cups crunchy rice cereal
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 cup mini marshmallows
  • 1 cup chocolate chips (melted)
  • 1 tsp vanilla extract

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a large bowl, stir together peanut butter and powdered sugar until combined.
  3. Gently fold in the crunchy rice cereal and mini marshmallows.
  4. Scoop spoonfuls of the mixture onto the prepared baking sheet.
  5. Melt the chocolate chips in a microwave-safe bowl in 30-second increments, stirring until smooth.
  6. Dip each cookie top into the melted chocolate or drizzle over the cookies.
  7. Chill in the fridge for at least 30 minutes until the chocolate is set.
