Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar
  • 16 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream

Instructions

  1. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well until crumbs are moist.
  2. Transfer the mixture to a 9-inch springform pan and press evenly across the bottom and slightly up the sides. Chill in the refrigerator while you prepare the filling.
  3. In a separate bowl, beat the heavy whipping cream until medium peaks form. Set aside.
  4. In another bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  5. Gently fold the whipped cream into the cream cheese mixture until well combined.
  6. Pour the cheesecake filling into the chilled crust, smoothing the top with a spatula.
  7. Cover the cheesecake and refrigerate for at least 4 hours, or overnight, until set.

Notes

For a firmer texture, chill longer. Store leftovers in an airtight container in the fridge for up to one week.
