Ingredients

  • 1 cup creamy peanut butter
  • ½ cup honey or maple syrup
  • 3 cups rice cereal
  • 1 cup semi-sweet chocolate chips
  • ½ teaspoon vanilla extract

Instructions

  1. Line an 8×8 inch square baking dish with parchment paper or lightly grease it.
  2. In a medium saucepan over low heat, combine the peanut butter and honey (or maple syrup) until melted and smooth.
  3. Remove from heat and fold in the rice cereal until fully coated.
  4. Transfer the mixture to the prepared baking dish and press down evenly.
  5. Melt the chocolate chips in a microwave-safe bowl in 30-second intervals until smooth.
