Ingredients

  • 2 cups rolled oats
  • 1 cup nut butter (peanut or almond)
  • ½ cup honey or maple syrup
  • 1 cup chocolate chips
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions

  1. Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, combine rolled oats, nut butter, honey (or maple syrup), chocolate chips, vanilla extract, and salt. Stir until fully combined.
  3. Transfer the mixture to your prepared baking dish and evenly press it into the bottom.
  4. Cover the dish with plastic wrap and refrigerate for at least 2 hours, or until firm.
  5. Once set, remove from the pan using the parchment overhang, slice into bars, and enjoy!

Notes

Keep bars in an airtight container in the fridge for up to one week. These bars can also be frozen for up to 3 months.
