Ingredients

  • 2 cups chow mein noodles
  • 1 cup semi-sweet chocolate chips
  • ½ cup creamy peanut butter
  • ½ cup chopped nuts (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Gather all your ingredients and line a baking sheet with parchment paper.
  2. In a medium saucepan over low heat, melt the chocolate chips and peanut butter together, stirring constantly until smooth.
  3. Once melted, remove from heat and mix in the vanilla extract and a pinch of salt.
  4. Gently fold in the chow mein noodles and nuts until fully coated with the chocolate mixture.
  5. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared baking sheet.
  6. Place the baking sheet in the fridge and let the cookies set for at least 30 minutes.
  7. Once they’re firm, enjoy these delightful goodies!

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen in a single layer.
