Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, peanut butter, honey, vanilla extract, and a pinch of salt. Stir until fully mixed.
  2. Line a baking sheet with parchment paper. Using your hands or a spoon, scoop out portions of the mixture and flatten them into cookie shapes. Aim for about 1/4 inch thick.
  3. Place the cookies in the refrigerator for about 15-20 minutes, until they are set and firm.
