Ingredients

Scale
  • 15 pitted Medjool dates
  • 3/4 cup unsalted cashews
  • 3/4 cup unsalted almonds
  • 1 cup Greek yogurt
  • Assorted sliced fresh fruit (optional for topping)
  • 2 Tablespoons apricot preserves (optional)
  • 1 Tablespoon water (optional)

Instructions

  1. Spray the bottom of a 9-inch tart pan with nonstick spray and line it with parchment paper.
  2. Soak the dates in warm water for 10 minutes, then drain and cut them in half.
  3. Pulse the dates, cashews, and almonds together in a food processor until a sticky ‘dough’ forms.
  4. Press the ‘dough’ evenly into the tart pan and partly up the sides.
  5. Spread the yogurt on top of the crust and decorate with fresh fruit.
  6. Mix the apricot preserves with 1 tablespoon of water if desired and brush it over the fruit.
  7. Slice and serve immediately, or cover and refrigerate for up to 1 day.

Notes

Chilling the tart for 15 minutes before slicing will yield cleaner cuts.
