Instructions

  1. Prepare the Slow Cooker: Grease the inside of your slow cooker with cooking spray or butter.
  2. Soak the Oats: In a mixing bowl, combine the oats and boiling water. Let it sit for about 20 minutes, stirring occasionally.
  3. Mix Dry Ingredients: In another bowl, whisk together the flour, baking soda, cinnamon, and nutmeg. Set aside.
  4. Combine Wet Ingredients: In a large mixing bowl, blend the sugars, oil, eggs, and vanilla until smooth.
  5. Combine Mixtures: Add the soaked oats to the wet mixture, then gradually stir in the dry ingredients until just combined.
  6. Transfer to Slow Cooker: Pour the mixture into the prepared slow cooker, smoothing it out evenly.
  7. Cook: Cover and cook on low for 4-5 hours or until a toothpick comes out clean from the center.
