  • 1 teaspoon ground cinnamon

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups rolled oats
  • 1 cup raisins

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper or a silicone mat.
  3. In a bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  4. In a separate bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
  5. Mix in the egg and vanilla extract until well combined.
  6. Gradually add the dry mixture to the wet ingredients until just combined. Fold in the oats and raisins.
  7. Drop tablespoon-sized scoops of dough onto the baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are golden brown. Cool on a wire rack before serving.

Notes

For a twist, substitute raisins with dried cranberries or chocolate chips. Chill the dough for 30 minutes for better texture.
