Ingredients

  • 1 baked pie crust, 9 inches
  • 1 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 2 1/2 cups whole milk
  • 3 large egg yolks
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together the sugar, cocoa powder, cornstarch, and salt in a medium saucepan.
  3. Add the whole milk gradually, whisking until smooth.
  4. Cook over medium heat, stirring constantly, until thickened.
  5. Beat the egg yolks in a small bowl, then temper with the hot chocolate mixture.
  6. Pour the yolk mixture back into the saucepan and cook for 2 more minutes.
  7. Remove from heat and stir in butter and vanilla until melted.
  8. Pour the chocolate filling into the baked pie crust.
  9. Beat the egg whites and cream of tartar until soft peaks form.
  10. Add sugar gradually and beat until stiff peaks form.
  11. Spread meringue over the filling, sealing the edges.
  12. Bake for 12 to 15 minutes until golden.
  13. Cool completely before slicing.

Notes

Store leftover pie covered in the refrigerator for up to 3 days. Bring slices to room temperature before serving.
