  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup coarsely chopped pecans
  • 1 tablespoon instant coffee granules
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×9-inch baking dish or line it with parchment paper.
  3. Melt the unsalted butter in a medium saucepan over low heat.
  4. In a mixing bowl, combine the melted butter and sugar, stirring until combined.
  5. Whisk in the eggs one at a time and then add the vanilla extract.
  6. Sift in the flour and instant coffee granules, folding gently to combine.
  7. Fold in the chopped pecans until evenly distributed.
  8. Pour the batter into the prepared baking dish and spread evenly.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool in the pan for 15 minutes before dusting with powdered sugar and cutting into squares.

Notes

For a richer flavor, try using brown sugar instead of granulated sugar. Serve with coffee or vanilla ice cream.
